Ayurvedic Nourishing Immunity energy balls

Ingredients

1/2 cup almonds

1/2 cup cashews

1/2 cup walnuts

1/2 cup shredded coconut

1 cup chopped pitted natural dates 

1/2 teaspoon cardamom powder

1/4 teaspoon dry ginger powder

2 teaspoons coconut oil

Method:

  1. Grind up the almonds, cashews, walnuts, shredded coconut in a blender or food processor until they are a powder. Add chopped dates with cardamom powder, dry ginger powder and mix with blender or by hand.  Add them to a large mixing bowl.

  2. Add 2 teaspoons of coconut oil.  Use hands to mix everything together.

  3. Take a small amount of the mix and roll it in the palms of your hands to make balls.

  4. Place the rolled energy balls onto a plate, and refrigerate (this is necessary so they do not melt).

  5. Store them in airtight container, and they should keep for a couple of weeks


They are to balance all body types in the warmer seasons and can be enjoyed in moderation.

You can roll these balls in shredded coconut if you like or even dip in chocolate.

NOTES: Play around with the ingredients and use what you have. You can add hemp seeds, flax seeds for extra fiber (we do this often), add raisins, cranberries, goji berries and other dried fruits. You can add 2 teaspoons of Spirulina powder for additional nutritional power.
